How To’sday: Popping Amaranth

I’m sure by now that everyone knows about quinoa around here. You can make everything from cereal to tacos with it, but are you familiar with another ancient powerhouse grain called Amaranth? Well, like quinoa, it’s also a fantastic source of complete plant-based protein but it is also high in lysine which is known to help promote collagen growth, burn fat as energy and it keeps cold sores at bay. These tiny powerhouse seeds are a great source of fiber and they are just as versatile for cookin’ as our friend quinoa. And you can pop it like popcorn. That’s right, teeny tiny popcorn. As you may know, the life of a yogi is a pretty active one. When it comes to breakfast we yogis need something that is really gonna rev engines and jet set our day. Personally, breakfast has always been the most challenging meal of the day for me—I’m either left feeling heavy, or teased and wanting more.

To be honest, I am also a picky eater. There isn’t some neat category you can shove me into. Vegetarian doesn’t work because I don’t eat dairy. Vegan doesn’t work because I love raw fish. Then with allergies to soy, cane and beet sugar…you can see that the first meal of the day for me could be a nightmare. Luckily, a fellow yogi from Boulder came and stayed with me for a few days and wanted to use my blender—a cheap purchase from Target, and at this point it was quite dusty. But after busting it out and going along with the smoothie routine with my friend during her stay I have not been the same since. Read more…

How To’s Day: Cooking Quinoa

Quinoa is a superfood in my book. It has the most complete protein of any grain, and it’s a fantastic source of vitamins and minerals—iron, magnesium, vitamin E, potassium and fiber. It’s gluten-free, inexpensive and very easy to prepare. You can find red, gold and black varieties in most health food stores. Always check the bulk section for cost savings. Read more…

YU+Me=Clean: Melissa’s Healthier Peanut Butter Patties a.k.a Tagalongs

You know what stinks for a new vegan, especially one trying to kick her sugar habit?

Girls Scout Cookie sales.

There, I said it. This challenge participant isn’t going to cave, but don’t fault me for opening a box of Peanut Butter Patties or Caramel deLites (Samoas) and inhaling deeply multiple times a day. I figure though, if I can’t have them I might as well make something similar that I can have, right?

So I spent the last couple of days scouring for the perfect recipe, and after some trial and error, I think I have found my own vegan-less sugary-can-read-all-the-ingredients-cleaner version of the elusive Peanut Butter Patties (Tagalongs).
