This past weekend, YU Contributor Maya Henderson and I took out my newly rehabbed 1968 Shasta Loflyte Trailer for a quick Glamping (oh yes, glamorous luxury camping) trip to Kettle Moraine State Forest in Wisconsin. Herbed Cashews: Raw or Roasted

I made up a big batch of these for a Labor Day roadtrip and thought I’d share. Fall is my favorite season (scarves, boots, crisp leaves), and I know I’m jumping the gun, but there is something so autumnal about this herb combo. This favorite new oil-free, gluten-free recipe works well not only for cashews, but for a medley of nuts and seeds—try equal amounts of almonds, cashews and sunflower seeds. Chinese Spiced Pecans: Roasted or Dehydrated

Smoky BBQ Almonds: Roasted or High Raw

This is one of the tasty snacks that I mention in the recent recipe post for Impossibly Delicious Raw BBQ Sauce. It’s an easy, vegan, plant-based recipe to prepare either dehydrated or roasted at a lower temp in the oven. Customize the time or ingredients to make them just the way you like—even gluten-free.

Penny’s High Raw Chocolate Coconut Macaroons

Hi friends! Major apology for not having more recipes this past few weeks but the holidays came, Penny’s Pastries got swamped, and I got a great new job at the same time! Thanks for the readers who ordered from me, and those of you who didn’t, there’s still time! This is my last post for my YumUniverse guest blogging series but maybe if you guys like me enough, I can come back and be a guest blogger from time to time (wink, wink).

This final Chocolate Coconut Macaroons recipe is actually one of my favorites to keep in the house at all times. It’s perfectly bite-sized, is gluten free and 90% raw. They are super easy to make and a huge hit at parties. Enjoy!
