Penny’s High Raw Chocolate Coconut Macaroons

Hi friends! Major apology for not having more recipes this past few weeks but the holidays came, Penny’s Pastries got swamped, and I got a great new job at the same time! Thanks for the readers who ordered from me, and those of you who didn’t, there’s still time! This is my last post for my YumUniverse guest blogging series but maybe if you guys like me enough, I can come back and be a guest blogger from time to time (wink, wink).

This final Chocolate Coconut Macaroons recipe is actually one of my favorites to keep in the house at all times. It’s perfectly bite-sized, is gluten free and 90% raw. They are super easy to make and a huge hit at parties. Enjoy!

Cocoa Cardamom Cookie Ornaments

I have always been intrigued by edible decorations on a Christmas tree. This weekend, I’m having some pals over for a holiday soiree and I thought, this would be a perfect time to experiment with this idea. But what to create? So, I opened my pantry and the smell of fresh ground cardamom (left over from my recent 24 Carrot Supper Club dinner) reached out and said “use me!” I am a superfan of cardamom, and together with chocolate, it’s pretty much heaven, so I got to work.

The house smells like evergreen with hints of chocolate and cardamom as I type up this recipe for YU. The fire is going, and Vince Guaraldi is banging out my favorite holiday tunes—A Charlie Brown Christmas. Raw Cacao Kale Crunch

For a while now I have been fairly disappointed in the quality of raw snacks available in stores. Too often, I find myself getting tricked by cute packaging or enticing flavor combos. Cocoa Mole? BBQ? Thai Curry? Yes, please! I’ll spend the $10 per bag hoping that it is going to be a new trusted travel, office or roadtrip snack for those times when I cannot make it myself. But, I have to side with the skeptics on this one, in that most of this stuff, sadly, does taste like tree bark. Of course, I wish this wasn’t the case, but I have to be honest. There is a lot of room for improvement. Raw snacks should be just as delicious, if not more so, than the non-raw snacks in the grocery aisles. Uncle Joe, who loves him some BBQ ribs, should love raw snacks as much as your hippie cousin. Good snacks are good snacks, period. Read more…

Dairy-Free Mexican Un-Fried Ice Cream

I have had my eye on the Food Should Taste Good chips at the grocery store for some time now, but today I finally brought a bag home. Chocolate Tortilla Chips were the lucky ones, but with my first taste, I knew that I, and soon you, would be the true “lucky ones.”

See, these chips taste like an Oreo and a tortilla chip made a beautiful, sophisticated, non-genetically modified, gluten-free baby. After munching on my first one, I knew what I had to do—Mexican Un-Fried Ice Cream. It had to be done without frying, without the trans fats, dairy or intense labor. It had to be possible. And oh, it was.

So joyously, I report, you don’t have to wait long, or work hard to have this dessert asap. Just three ingredients and about 15 minutes time will have you enjoying the tastiest vegan combo this side of the border. Go ahead and dance. I did. Read more…

Chocolate Salted Almond Bark

The other day, my sweetie came in the kitchen and saw some almonds soaking on the counter and said suggestively. “I bet those would be good with chocolate on them.” Genius. I grabbed a bag of gluten-free, vegan chocolate chips from the pantry and whipped up a simple and delicious almond bark that night. It didn’t last more than 24 hours. I guess Mikey liked them. A lot.

I use raw, soaked and dehydrated almonds, but you can use regular raw almonds or toasted almonds. But be sure to read up on why soaking and dehydrating is optimal. Read more…
