A weekly or bi-weekly creation in the YumUniverse kitchen, Vegan Pumpkin Protein Pancakes are, yes, packed with quality complete protein, but that’s not all the goodness. They are full of fiber, gluten-free, wheat-free, easily assimilated into the body and just plain delicious. I usually make a batch, eat a few right away and keep the rest in the fridge, grabbing one or two and eating them cold as a snack throughout the week. This recipe was inspired by some of Brendan Brazier’s incredible recipes for athletes in his book Thrive: A Guide to Optimal Health & Performance Through Plant-Based Whole Foods
. You can serve them with our without natural sweeteners like agave nectar, yacon syrup, brown rice syrup or maple syrup on top. You can also prepare them in a dehydrator if you’d like to maintain more beneficial enzymes. Read more…

If you are looking for alternatives to dairy milk, you will love this recipe for fresh vanilla almond milk using soaked almonds. Enjoy it straight from the glass, on your favorite cereal, use it in ice cream recipes and more. Raw vanilla almond milk is enzyme-rich, very hydrating and you can store it in the fridge for about 5-7 days. It may separate, so shake it up before using/drinking. I am a huge fan of Indian food and had been thinking for a while that I’d like to tackle the creation of a non-dairy, meat-free, gluten-free, wheat-free curry recipe. With my pal Marci’s help one night over the holidays, Mixed Vegetable Curry with Brown Basmati Rice was born. This recipe is slightly adapted from Jamie Oliver’s Paneer, Potato and Pea Curry. My friend, and YumUniverse contributor, Maya Henderson, turned me on to Cinnamon Date Manna Bread on a recent trip to Whole Foods. I was familiar with regular Manna Bread, but Cinnamon Date Manna Bread? Yum! Maya claimed that it had been on her craving list the past week and that it “tasted great with coconut butter on it.” I got home, tried one slice, and one slice became two and then my wheels started turning. I ended up experimenting with a bread pudding recipe using this tasty sprouted bread, a non-dairy vanilla bean cream sauce and a dairy-free caramel sauce. You can bake this recipe in the oven at a low temperature or dehydrate it to maintain the enzymes in the sauces.
Manna Bread is an unleavened cake-like bread made from sprouted whole grains. It is high in fiber, yeast-free and has no added sweeteners or artificial preservatives. It comes in other flavors that you can experiment with like Carrot Raisin and Banana Walnut Hemp. I’m sure both are just as yummy with this recipe. Raw coconut milk is easy to make simply by opening young coconuts and blending the natural coconut water with the coconut meat. It is a fantastic, tasty and nutritious replacement for dairy in many recipes from Raw Dairy-Free Strawberry Swirl Ice Cream to Mixed Vegetable Curry with Brown Basmati Rice.
