These easy to grow vegetables may be eaten from foliage to root. Grow in cool months and know that they will take some frost. Beets are high in Vitamin C, folic acid, fiber and potassium. At Harvest time, turn them into beet chips or make a beet salad. Detroit Dark Red has very tasty foliage, Chioggio is ringed in the root bright pink and white. The Golden Beet has bright yellow flesh. Pretty!
