This dairy-free, soy-free ice cream recipe is super easy and perfect for the holidays. Best part is you don’t need an ice cream maker to enjoy it. I bet Santa would love this!
Makes: 4 servings

Ice cream maker or attachment*
Medium glass dish with lid
*No ice cream maker? No problem, just mix together ingredients and place in glass covered dish. The ice cream won’t be as light/fluffy, but it will be delish.
Ingredients:
Try to buy everything organic. Here’s why.
1 14 oz can of coconut milk
1/3 cup chopped vegan chocolate bar (make sure it’s gluten-free if you have a sensitivity)
1/4 cup light agave nectar
1/2 tsp vanilla extract
1 tsp peppermint extract
Pinch fine ground sea salt
Let’s get started.
Chop your chocolate bar into small/medium chunks. Place all ingredients into the ice cream maker and process according to manufacturer’s instructions.
Fill glass dish with ice cream, cover and freeze.

What brand of vegan chocolate bar do you recommend?

I tend to use the Dream Chocolate Bars out of convenience. They seem to be the ones I can find at the health food store (Whole Foods) that are dairy-free and gluten-free. Good luck and let me know if you find another brand you like!
