Try to buy everything organic. Here’s why.
3 cup cooked black beans (here’s how to prepare)
1/4 cup coconut oil
2 cups chopped vegan chocolate bar or chocolate chips (make sure it’s gluten-free if you have a sensitivity)
2/3 cup cacao powder (or cocoa)
1/2 tsp fine ground sea salt
1 tbsp vanilla extract
1 cup +2 tbsp sucanat
Try adding 1 tsp chipotle powder for a spicy kick.
Let’s get started.
Soak, rinse and cook your black beans.
Preheat oven to 350°F. Line your cookie sheet with unbleached parchment paper. In a double boiler, or using a hacked double-boiler method, melt your chocolate and coconut oil together.
Place all ingredients in the food processor and mix until creamy. Spread into pan and bake for 35-40 minutes, or until a knife comes out clean after inserting it into brownies.
