Roasted Red Pepper Tomato Soup with Cashew Cream

This soup is one that keeps a Chicagoan sane in early March. When the sky is dark and the wind and temps are just plain cruel, roasted, creamy, warm soup like this is a big ole hug for the spirit. It’s gluten-free, vegan, loaded with antioxidants, B vitamins, lycopene and it’s easy to make. While veggies are roasting, sit by the fire and read a travel magazine for extra imaginary sunshine.

Ingredients
Soup:
1 large organic shallot
6-7 cloves organic garlic
2 large, organic red peppers
4-5 sm-med, organic tomatoes
1 tbsp organic extra virgin coconut oil
2 cups organic vegetable stock (or make your own)
Ground organic black pepper to taste
Sea salt to taste

Cashew Cream Sauce (optional):
2/3 cup raw cashews
1/2 cup pure water
1/4 tsp sea salt

Let’s get started.
Heat oven to 350°F. Slice peppers in half, removing seeds. Slice tomatoes in half and cut out core.

Remove skin from garlic cloves (you can use this tip), then remove outer skin from shallot and chop cloves into quarters.

Put coconut oil in bottom of roasting pan. Place tomatoes and peppers face down into pan. Place shallots and garlic in between.

Roast veggies for 1 hour until skins are browned and wrinkled.

Remove from oven and allow to cool. Then easily remove skins from peppers and place all roasted veggies and remaining soup ingredients into the blender.

Blend until creamy. Transfer to saucepan to warm over low heat.
Place Cashew Cream Sauce ingredients into blender and pulse until smooth and creamy. Pour soup in a bowl, top with cream and fresh ground pepper. Enjoy!

Store in an airtight glass container in the fridge for up to one week. Makes a great soup for lunch the next day too. Also yummy room temp or cold.
