Simple Raw Flax Fruit Salad

This fresh ground flax and sunflower seed fruit salad is simple to prepare, it’s sweet with a hint salt and totally summery. It makes a great snack pre-workout and its a good way to get in those Omega 3’s. Bonus: it takes 10 minutes at the most to prepare.

Makes: 1-2 servings
Preparation Time: 10mins

Tools:
Knife
Coffee Grinder (optional)

Ingredients:
2 Tbsp flax seed, brown and or golden (if you do not have a coffee grinder, purchase pre-ground flax seed and be sure to store in the fridge)
1 organic banana
5-6 organic strawberries
1/4 cup hulled sunflower seeds, soaked and dehydrated (you can soak and then toast your seeds at low temps in the oven, or bypass those steps altogether, if you like)
Pinch of fine ground pink Himalayan or Celtic sea salt

Let’s Get Started:
Slice your banana and chop your strawberries and place in a bowl.

Flax seeds pack a fantastic nutritional punch, and freshly ground flax seeds are optimal for assimilation. They are fragile little buggers, and the essential oils in them can go rancid easily, so make sure you store them in the refrigerator—whole or ground.

Grind seeds in a coffee grinder until pretty broken apart, but not sticking together. Mix with your sea salt.

Sprinkle your freshly ground seed and salt mixture over your fruit.

Toss with sunflower seeds and enjoy! Store any leftovers in an airtight glass jar in the refrigerator.

    Oh, yum. I am in such a breakfast rut, so this looks like a perfect thing to try. I especially like that it’s not too sweet and has some lasting power thanks to the flax and sunflower seeds!

    Great idea! I’ll have to try this. I have lots of flax seeds but need to incorporate them in various dishes more often.
