Raw Carrot Almond Pate is a YumUniverse kitchen staple. You can spread it on Raw White Bread (shown above) or Manna Bread for a quick, healthy a snack or add tomato, fresh greens and sprouts for a sandwich. Scoop some onto a fresh green salad or use it to make a delicious Raw Carrot Almond Crunch Maki. Of course, you can just eat a few spoonfuls plain out of the container. I do it all the time. Raw Carrot Almond Maki is simple to make, delicious and a great recipe that you can change up to make it your own. Try adding garlic, or switching out carrots for sundried tomatoes and parsley for basil. Try adding cumin and coriander. Make it sweeter by removing savory ingredients and adding cinnamon and sundried raisins. Have fun and share what you create with us.

Food Processor
Dehydrator (optional)
Ingredients:
1/4 cup of soaked and dehydrated raw almonds*
1/2 cup of soaked and dehydrated raw sunflower seeds*
1/8 cup sesame seeds
1/2 tsp mellow white miso (optional, make sure it’s gluten-free if you have sensitivities)
1 large, chopped organic carrot
1 small handful of fresh, organic parsley leaves
1 Tbsp chopped organic white onion
1/4 tsp Nama Shoyu (do not use if you have gluten sensitivity)
1 tsp fresh, organic lemon juice
Sea Salt to taste
*If you do not have a dehydrator, you can soak the almonds and seeds without dehydrating them, just know that the texture will be more soft than crunchy. I try to make life easier by keeping my pantry stocked with soaked/dehydrated nuts and seeds of all kinds. Soaking is ideal whether you dehydrate or not, in order to neutralize the enzyme inhibitors and activate digestive enzymes for proper nutrient assimilation. Of course, you can bypass all of these extra steps if you’d like and just use raw almonds.
Let’s Get Started:
Place all of your ingredients in the food processor.

Pulse until pate reaches the texture you like.

Raw Carrot Almond Pate keeps in the fridge for about 5-7 days. Store in an airtight glass container.
