This raw, dairy-free vanilla ice cream recipe is delicious on it’s own and it makes a perfect base for many other YumUniverse ice cream recipes like Raw Cinnamon Bun Ice Cream and Raw Strawberry Swirl Ice Cream. It is definitely a treat that is enjoyed by vegans and dairy-lovers alike. I almost always hear “I can’t believe that there’s no dairy in this, it’s so creamy—it tastes like real ice cream.” High-five.
Makes: approx. 1.5 quarts | Preparation Time: 45mins

Blender
Ice Cream Maker (optional)
Ingredients:
Try to buy everything organic. Here’s why.
2 cups fresh, Raw Vanilla Almond Milk
1/3 cup raw, wild-harvested honey
1 tsp vanilla extract or vanilla bean seeds from 1 vanilla pod
2 tbsp raw coconut oil
1/4 tsp fine ground sea salt
2 1/2 cups of fresh, young coconut meat
Put all vanilla ice cream ingredients in the blender and blend for 3 minutes. You want to blend it for a while to bring it to the creamy, almost aerated consistency that an ice cream maker would create. If you have an ice cream maker, after mixture is blended, chill for about 1 hour in the refrigerator until cold, and then pour into your ice cream maker and follow the manufacturer’s instructions.
If you won’t be using an ice cream maker, once your 3 minutes are up and your mixture is properly blended, pour mixture into a deep dish, cover it and place in the freezer.
When ready to eat, let ice cream thaw on counter for about 15 minutes until you can use a scooper to dish it out with ease.

I’ve done raw cashew cream based ice cream before, but I wouldn’t have thought of young coconut meat. Harder to find ingredient for sure, but it sounds super delicious! I will keep this in mind!
I made this and it was very good!!!!:) The sad part was that I only got a little over a cup of coconut meat so I had to cut the recipe in half. So next time I’ll buy 10 coconuts!! Then I’ll have spare ice cream. For those emergencies.
